The World’s Best (and Easiest) Pork Chops

Here’s a couple pro life tips for you: 1. If a Goodreads book has thousands of reviews and an over 4 star or higher rating, it is virtually guaranteed to be a good book. 2. If you find a recipe on the interwebs with over 100 reviews and a higher than 4 star rating, it’s going to be a good recipe. Now, you can’t re-write a book, but you can make a recipe your own! I only had one small addendum to this recipe, but I found it on theendlessmeal.com while scouring the web for pork chop recipes. My criteria: a recipe my children wouldn’t scoff at, and EUREKA! I found it. Bonus: crazy easy. Double bonus: easy clean up. The triple bonus? DELICIOUS!!

Give these chops a whirl. You will not be disappointed. You’ll drop a 5 star YUM as soon as you put them in your mouth! And if you line the pan with foil, clean up time will be 5 star fast too! Suggestions for serving sides: corn on the cob and salad (as pictured), asparagus and potatoes, or green beans and quinoa. Enjoy! And great news, kids LOVED them as much as the adults!! WIN!

Ingredients

  • 1 tablespoon paprika

  • 2 teaspoons EACH: onion powder and garlic powder

  • 1 teaspoon EACH: salt, pepper, and oregano

  • 2ish tablespoons olive oil, divided

  • 1 tablespoon of lemon juice

  • 4 – (1 ¼ inch thick) boneless pork chops

Directions

  1. Preheat your oven to 400F.

  2. In a small bowl, mix together the paprika, onion powder, garlic powder, salt, pepper, and oregano.

  3. Gently poke holes in your pork chops with a fork. Drizzle olive oil over both sides of the pork chops. Sprinkle the spice mix evenly over both sides of the pork chops, rub it in good, and place them in a foil-lined baking dish. Drizzle them with a bit more olive oil and the tablespoon of lemon juice. (I used the back of a spoon to spread it all around evenly.)

  4. Bake the pork chops uncovered for about 18 minutes, or until they reach an internal temperature of 140F. Once you remove them from the oven, let them rest in the pan for 5 minutes before serving. You will certainly ENJOY!
