Pumpkin Chili with Avocado Sauce

Is it pumpkin season yet?? This questions circles my brain in August, and about a week into September. And then I start looking for Libby. Oh Libby! You and your canned deliciousness. Making basic moms like me happy all fall long. Nobody really cares that it’s still 90 degrees outside do they? Won’t just the pumpkin flavor make everyone feel like fall is here on the INSIDE? Honestly, I told my mom I was making pumpkin chili, and she was like, “No thank you.” And I was like, “Mom, puh-lease. Just TRUUUUUST me.” And guess what? I WON! She had seconds. In the photo, there is cheese on top. (Not paleo!) I had to tell you because someone asked me if it was french fries! I don’t know if you’ve ever had Tilamook’s shredded cheddar, but it’s really the best. We have dairy occasionally because no one has allergies in our family, and my son is a chocolate milk FREAK. But again, if you’re deciding which cheese to top your pumpkin chili, try Tilamook. And listen close, this is very important. Do NOT skip the avocado cream! And yes, it needs to be OJ! Like my mom, TRUST ME. You will pin this recipe so hard, you might even serve it for company. Easy. Fast. Delicious. Impressive. And make enough for seconds all around!

INGREDIENTS

For the Chili

2 lbs ground beef
1 yellow onion, diced
4-5 cloves garlic, diced
14 oz can of pumpkin puree (NOT pumpkin pie)
1 (28 oz) can diced, fire roasted tomatoes
1 (15 oz) can tomato sauce
1 (7 oz) can diced, roasted green chilies (opt)
1 c chicken or beef broth
2 T chili powder
2 T cumin
1 T paprika
2 t salt
2 t coriander
2 t cinnamon
2 t cocoa powder
1 t garlic powder
1/2 t cayenne

Avocado Cream

2 avocados
4-5 Tbsp orange juice
1 t coriander
1/2 t salt

INSTRUCTIONS

  1. In a large pot, sauté garlic and onion until translucent. Add beef to brown.

  2. Make your spice mixture. If you’re missing an ingredient, don’t sweat it. It will be delicious. Add to a bowl.

  3. Using a slotted spoon, add beef to the spice mix and stir. Drain fat from pan.

  4. Add pumpkin and stir and cook about 5 minutes. Then add the remainder of the ingredients and bring to a simmer.

  5. Add your ingredients for avocado cream to a blender or ninja and puree.

  6. Serve warm and top with cream, cheese, cilantro, etc. Enjoy!
