Tortellini and Veggies Stir Fry

If you’ve ever looked in the fridge and noticed it’s full of food, yet still been unsure about what to make for dinner, especially when you’re in a hurry, then this easily adaptable and changeable recipe is for YOU! I had a decent amount of veggies on hand, some tortellini, and a Hillshire Farms turkey sausage, and about 10 minutes later, dinner was served! I was proud, but now I’m borderline embarrassed because it was JUST SO EASY. Easy button for days. You could easily omit the sausage for a vegetarian dinner. It’s a colorful meal, and I love to have the family eat the rainbow. Stir frys are fabulous when you’re unsure about what to make for dinner and you’re feeling a bit experimental. Add what you have, what you love, and tell those picky eaters to eat around the damn tomatoes if they don’t want to swallow them. Better yet, put them on Andy’s plate; he eats everything! Curious: what’s you’re go-to dinner when you’re in a hurry? Is it colorful? Full of veggies? Maybe we should start a “Easy-dinner-colorful-quick-and-healthy” Club! Because doesn’t it feel amazing to try something new that everyone will actually eat?!

Ingredients:

  • 1 pkg spinach tortellini (I used Trader Joe’s)

  • 1 pkg turkey sausage, cut bite sized

  • 2-3 colored peppers, cut in 1-2 inch pieces

  • 2-3 medium heirloom tomatoes, cut into bite sized chunks

  • handful of asparagus, cut into 2 inch pieces

  • Arugula, or other greens, for serving

Directions:

  1. Boil water to cook tortellini according to package instructions.

  2. Slice turkey sausage and add to a medium skillet, stirring occasionally.

  3. Once sausage is almost done, add peppers, asparagus, (any other veggies) but save tomatoes for last.

  4. Drain tortellini and add to dish, stirring to mix together.

  5. Add tomatoes last. Cook just long enough for everything to cook through (1-2 minutes) and serve over a bed of arugula or greens of choice. Enjoy!
