Sweet Potato Sloppy Joe's

Oh. My. LAWD. This dish is DAMN delicious!! I originally found it on some Whole30 challenge, but it was a pain in the butt. Who has time to soak and puree dates?? Then, I found something pretty similar on Skinnytaste.com. And the baby is this. Sweet potato sloppy Joe goodness. The only thing wrong with this dish is that it feels like there is NEVER, EVER, enough. YES, it’s that good! And I want you to trust me, so I will not lie to you. Make this dish. Eat this dish. Get rave reviews and be the family hero because you (easily) made this dish. And then come back and thank me, ok? Pinky promise?? Avocado is an excellent addition. As is cilantro (on EVERYTHING, amiright?) So bake the potatoes, and whip up the meat topping, and get ready for praises from the masses. I hope you enjoy it as much as we do! Sweet Potato Sloppy Joe

INGREDIENTS

  • 4 -6 medium sweet potatoes, washed and dried

  • 1lb ground beef

  • 1 teaspoon seasoned salt (I use Montreal Steak seasoning)

  • 1/2 cup chopped carrot

  • 1/2 cup chopped onion

  • 1/2 chopped red bell pepper 

  • 1 clove garlic, minced

  • 1/2 tbsp red wine vinegar

  • 1 tbsp Worcestershire sauce or sub ¼ BBQ sauce

  • 8 oz can tomato sauce

  • 2 tbsp tomato paste

  • 1/3 cup water

  • Diced avocado, cilantro, sour cream for toppings

DIRECTIONS

  1. Poke holes in your sweet potatoes and wrap in foil. Bake in oven at 450F about 45 minutes or until they are a little soft when you squeeze them.

  2. Heat a large skillet over medium heat, spay with olive oil or coconut oil and add onions and garlic and cook until soft. Add beef and sprinkle with seasoned salt. Once cooked, add veggies, red wine vinegar, Worcestershire sauce or BBQ sauce, and cook about 5 minutes. Add tomato sauce, paste, and water and stir. Cover and simmer about 15 or 20 minutes.

  3. Cut open sweet potatoes, scoop some of the meat over top. Add toppings and enjoy!
