Lazy Pumpkin Spice Latte

The first time I heard someone call Starbucks “Fourbucks” it made me giggle. And then I stopped and thought about it… “Whoa. Four bucks a day really adds up!” Now it’s probably closer to $5, plus you leave $1 tip. That’s $6 per day, That’s $42 per week. That’s $186 per month. That’s $2232 per year. While I love the local coffee shop for the occasional frou-frou coffee, I enjoy coffee on the couch while I watch the sunrise in my pajamas just as much. And for the days that I want frou-frou at home, I make my lazy, homemade pumpkin spice latte. I used to make it with a saucepan, but I’ve been busy (lazy) lately and more frequently I zap that ish in the microwave. It’s quick OK?! Let’s not judge.

We stayed with a friend late this summer and he had oat milk in the fridge. I didn’t know I liked oat milk. I learned that I LOVE oat milk and it’s now my milk of choice. You can use any milk you like in your latte, but I am going to give you a strong recommendation to use oat milk if you haven’t tried it!

The best part of this homemade pumpkin spice latte? It tastes JUST as good as the coffee shop’s version, AND I get to sip it on my couch beside Nacho while I read and journal and watch the sunrise. Double bonus: there are no artificial (corn syrup) sweeteners, and I get to control just how sweet and strong I want it. Yee-haw! Giddyup and grab a cup… and don’t forget to save this post because once you’ve made it, you’re going to be hooked!

Ingredients (makes 2)

  • 2 cups (about 12 oz) of strong brewed coffee

  • 1/2 cup oat milk (more for less coffee flavor)

  • 4 Tbsp organic pumpkin puree

  • 2 tsp coconut sugar (or maple syrup)

  • 1 tsp pumpkin pie spice

  • 1/4 tsp vanilla

  • 1 scoop vanilla collagen (optional)

Directions*

  1. Warm oat milk and pumpkin puree in microwave about one minute.

  2. Add all the other ingredients: coffee, sugar, spice, vanilla, collagen into a magic bullet or blender and blend for 20-30 seconds.

  3. Pour into coffee cups and enjoy the sunrise!

    *note these are the LAZY directions. You can warm the ingredients in a saucepan before blending if you prefer.
