Sweet Potato Chili

Here’s another quick, easy, and delicious weeknight chili to put on your meal rotation for the winter! Great news: the WHOLE, yes, WHOLE family will love this one! Even the picky eaters. You can sneak in some extra veggies if you like, but you can feel good about this ingredient list. For this recipe I usually do ground turkey, but ground beef or even chicken would work in a pinch! This recipe is based off of skinnytaste.com’s sweet potato chili, but I added beans and my secret ingredient: BBQ SAUCE! It gives the chili a sweet and spicy kick that tastes delicious and will have the kiddos coming back for seconds. You can easily double this recipe and it reheats well for lunch the next day. Maybe even better! NOTE: If you live near Trader Joe’s, they sell bags of cubed butternut squash! It’s a time saver and guess what? NO ONE will know the difference! ;) Enjoy!

INGREDIENTS

  • 1 lb lean ground turkey

  • kosher salt, to taste

  • 1/2 cup onion, chopped

  • 3 cloves garlic, crushed

  • 10 oz can Rotel mild tomatoes with green chilies

  • 1/2 black or white beans (optional)

  • 8 oz can tomato sauce

  • ¼ cup your favorite bbq sauce

  • 3/4 cup water

  • 1/2 tsp cumin, or to taste

  • 1/4 tsp chili powder

  • 1/4 tsp paprika

  • 1 bay leaf

  • 1 medium sweet potato, peeled and diced into 1/2-inch cubes (*sub butternut squash)

  • Cilantro, Greek yogurt, avocado, hot sauce for garnish

 

Directions for Instant Pot:

1.            Press saute, spray the pot with oil and brown the turkey breaking it up as it cooks into smaller pieces and season with cumin, chili powder, paprika, salt.

2.           When meat is browned and cooked through add onion and garlic; cook 3 minutes.

3.           Add the can of Rotel tomatoes, sweet potato, beans, tomato sauce, bbq sauce, water, and stir. Add the bay leaf last for easy removal.

4. Set manual to 14 minutes on high pressure. Remove bay leaf and serve with toppings of choice!
